Ingredients
1 1/2poundslarge uncooked shrimpshelled and deveined
1egg yolk
2egg whites
1teaspoonsalt
1/4cupall-purpose flour
1/2cupfinely-crushed plain salt crackers
vegetable oil for deep frying
Instructions
“Butterfly” the shrimp and rinse under cold running water.
In a shallow bowl, combine the eggs and salt; beat well
In another bowl, combine the flour and cracker crumbs.
Dip each shrimp first in the egg mixture, then roll in the cracker mixture; pressing on lightly to coat completely.
Repeat procedure until all shrimp are coated.
In a large deep pot, heat 3-inches of the oil to 365°F.
Deep-fry the shrimp for 2–3 minutes, or until golden brown.
