Turkey Divan

Not sure what a Divan is? me either. but it sounds fancy. Anyway, don’t know what to do with that leftover holiday turkey? This dish makes an easy lunch or dinner served with warm dinner rolls and a crisp garden salad.

Ingredients

  • 2 10 ounce packages frozen broccoli flowerets defrosted
  • 1 pound turkey breast cooked and sliced thin
  • 4 tablespoons cornstarch
  • 1 cup turkey or chicken broth
  • 1 cup skim milk
  • 2/3 cup grated Cheddar cheese
  • 1/2 teaspoon salt

Instructions

  • Preheat oven to 375°F.
  • Cook the broccoli according to package instructions, or until just tender; drain well.
  • Arrange the broccoli in a lightly greased 11⁄2 quart casserole.
  • Lay the turkey slices on top of the broccoli.
  • In a small saucepan, mix the cornstarch with broth, over medium heat.
  • Mix until smooth.
  • Slowly add the milk.
  • Cook, stirring constantly, until thickened.
  • Reduce heat, and add the cheese and salt, stirring constantly, just until cheese melts.
  • Pour the sauce over the turkey.
  • Bake, uncovered, at 375°F for 25 minutes, or until the turkey is hot and the sauce is bubbly.
