Southwest Burgers

An inexpensive and more nutritious variation of an old North American favorite. I like mine on a grilled roll with a dollop of salsa and a paper-thin slice of red onion.

Ingredients

  • 1 slice whole-wheat bread
  • 1 pound fresh ground turkey
  • 1 egg white
  • 1/4 cup finely chopped onion
  • 2 cloves garlic minced
  • 2 tablespoons minced fresh parsley
  • 1/2 teaspoon ground cumin
  • 1 teaspoon dried oregano crumbled
  • fresh-ground black pepper to taste

Instructions

  • Make fresh bread crumbs with the bread slice by processing briefly in a food processor, blender, or food chopper.
  • In a large bowl, combine the bread crumbs, turkey, egg white, onion, garlic, parsley, cumin, oregano and pepper.
  • Mix well. You’ll find using your hands is the easiest.
  • Cover and refrigerate for 15–20 minutes.
  • Form into 4 patties.
  • Preheat the barbecue to a medium flame.
  • Arrange the patties on the grill and barbecue for 8–10 minutes per side, or until the center is no longer pink.
  • Serve immediately on grilled hamburger buns, with assorted condiments on the side.
