Tandoori Chicken
This healthy chicken dish is wonderful with a spicy Greek salad and wild rice pilaf. Don’t forget a basket of pita bread.

Ingredients

chicken breast halves
skinned and boned

cup
low-fat plain yogurt

teaspoons
crushed coriander seed
1/4
teaspoon
ground cumin
2
tablespoons
minced fresh ginger root
3
large cloves garlic
finely minced
1/2
teaspoon
ground turmeric
1/2
teaspoon
hot red pepper sauce
Instructions
Trim the fat and tendons from the chicken; rinse and pat dry.
In a large bowl, combine the yogurt, coriander, cumin, ginger root, garlic, turmeric and red pepper sauce.
Mix well.
Add the chicken breasts and turn to coat with the marinade.
Cover and refrigerate for at least 6 hours.
Preheat the barbecue to a medium-low flame.
Arrange the chicken pieces on the grill and barbecue for 8–10 minutes per side, or until fully cooked.
Serve immediately.
