Upside Down Ham Loaf

Purchase a whole smoked ham from the meat counter and ask your butcher to grind it for you. The combination of meats and brown sugar are a delectable variation on an old “standard” of firehouse kitchens.

Ingredients

  • 1 pound ground smoked ham
  • 1/2 pound lean ground pork
  • 1/2 pound lean ground veal
  • 2 eggs slightly beaten
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh-ground black pepper
  • 1/2 teaspoon dry mustard
  • 3 tablespoons minced green bell pepper
  • 1 tablespoon minced onion
  • 4 cups corn flakes crushed into coarse crumbs
  • 1/2 cup firmly-packed light brown sugar
  • 1 teaspoon ground cloves

Instructions

  • Preheat oven to 375°F.
  • In a large bowl, combine the meats, eggs, milk, salt, pepper, mustard, green pepper and onion.
  • Mix well. You’ll find using your hands is the easiest.
  • Add the corn flakes.
  • Mix thoroughly, again using your hands.
  • Pat the brown sugar into the bottom of an ungreased 9x13-inch baking pan.
  • Sprinkle with the ground cloves.
  • Form the meat mixture into an oblong loaf.
  • Place in the prepared baking pan.
  • Bake, uncovered, at 375°F for 1 hour, or until fully cooked.
  • Let loaf stand for 10 minutes before slicing and serving.
