Upside Down Ham Loaf
Purchase a whole smoked ham from the meat counter and ask your butcher to grind it for you. The combination of meats and brown sugar are a delectable variation on an old “standard” of firehouse kitchens.

Ingredients
- 1 pound ground smoked ham
- 1/2 pound lean ground pork
- 1/2 pound lean ground veal
- 2 eggs slightly beaten
- 1 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon fresh-ground black pepper
- 1/2 teaspoon dry mustard
- 3 tablespoons minced green bell pepper
- 1 tablespoon minced onion
- 4 cups corn flakes crushed into coarse crumbs
- 1/2 cup firmly-packed light brown sugar
- 1 teaspoon ground cloves
Instructions
- Preheat oven to 375°F.
- In a large bowl, combine the meats, eggs, milk, salt, pepper, mustard, green pepper and onion.
- Mix well. You’ll find using your hands is the easiest.
- Add the corn flakes.
- Mix thoroughly, again using your hands.
- Pat the brown sugar into the bottom of an ungreased 9×13-inch baking pan.
- Sprinkle with the ground cloves.
- Form the meat mixture into an oblong loaf.
- Place in the prepared baking pan.
- Bake, uncovered, at 375°F for 1 hour, or until fully cooked.
- Let loaf stand for 10 minutes before slicing and serving.
