Tandoori Chicken
This healthy chicken dish is wonderful with a spicy Greek salad and wild rice pilaf. Don’t forget a basket of pita bread.

- 8 chicken breast halves skinned and boned
- 1 cup low-fat plain yogurt
- 2 teaspoons crushed coriander seed
- 1/4 teaspoon ground cumin
- 2 tablespoons minced fresh ginger root
- 3 large cloves garlic finely minced
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon hot red pepper sauce
Instructions
- Trim the fat and tendons from the chicken; rinse and pat dry.
- In a large bowl, combine the yogurt, coriander, cumin, ginger root, garlic, turmeric and red pepper sauce.
- Mix well.
- Add the chicken breasts and turn to coat with the marinade.
- Cover and refrigerate for at least 6 hours.
- Preheat the barbecue to a medium-low flame.
- Arrange the chicken pieces on the grill and barbecue for 8–10 minutes per side, or until fully cooked.
- Serve immediately.
