Tandoori Chicken

This healthy chicken dish is wonderful with a spicy Greek salad and wild rice pilaf. Don’t forget a basket of pita bread.

Ingredients

  • 8 chicken breast halves skinned and boned
  • 1 cup low-fat plain yogurt
  • 2 teaspoons crushed coriander seed
  • 1/4 teaspoon ground cumin
  • 2 tablespoons minced fresh ginger root
  • 3 large cloves garlic finely minced
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon hot red pepper sauce

Instructions

  • Trim the fat and tendons from the chicken; rinse and pat dry.
  • In a large bowl, combine the yogurt, coriander, cumin, ginger root, garlic, turmeric and red pepper sauce.
  • Mix well.
  • Add the chicken breasts and turn to coat with the marinade.
  • Cover and refrigerate for at least 6 hours.
  • Preheat the barbecue to a medium-low flame.
  • Arrange the chicken pieces on the grill and barbecue for 8–10 minutes per side, or until fully cooked.
  • Serve immediately.
