Shrimp Parmesan

Two Italian favorites, tomatoey shrimp and melted cheese, combine to make a wonderful dish. I recommend you serve this dish with a side of pasta tossed with garlic and olive oil, some green beans, and a crisp salad.

Ingredients

  • 4 pounds large uncooked shrimp shelled and deveined
  • 3/4 pound butter or margarine
  • 1 large white onion diced
  • 3 large cloves garlic minced
  • 2 cups grated Mozzarella cheese
  • 2/3 grated Parmesan cheese
  • 1 16 ounce jar marinara sauce

Instructions

  • Preheat oven to 400°F, and lightly butter a 9×13-inch baking pan.
  • Arrange the shrimp evenly across the bottom of the baking pan.
  • Set aside.
  • In a medium frying pan, melt the butter over medium-high heat.
  • Add the onion and garlic, sauté until soft.
  • Pour the mixture evenly over the shrimp.
  • Sprinkle the Mozzarella, then the Parmesan cheese over the shrimp.
  • Cover the cheeses and shrimp with the marinara sauce.
  • Bake, uncovered, at 400°F for 15–20 minutes, or until the shrimp are fully cooked.
  • Serve immediately.
