Broiled Lemon Cajun Chicken
This dish really goes together fast. I recommend serving it with a bright green vegetable or broiled tomato halves on the side. I've made it tons of time on TV.

Ingredients
- 8 chicken breast halves skinned and boned
- 1 1/2 cups cups butter
- 3 large cloves garlic minced
- 2 tablespoons dried parsley
- 3 tablespoons cayenne pepper
- 1/3 cup fresh lemon juice
Instructions
- Preheat the broiler.
- Trim the fat and tendons from the chicken, rinse, and pat dry.
- In a medium frying pan, melt 2 tablespoons of the butter over medium heat.
- Add the garlic and sauté for 1 minute.
- Add the remaining butter, parsley and 1 teaspoon of the cayenne pepper.
- Simmer for 1 minute.
- Spread 1⁄2 cup of the butter mixture in a 9×13-inch baking pan.
- Arrange the chicken breasts in the baking pan.
- Sprinkle evenly with 2 tablespoons of the lemon juice and 1 tablespoon of the cayenne pepper.
- Cover the chicken with the remaining butter mixture.
- Broil 6-inches from the flame for 10 minutes.
- Turn chicken, and sprinkle with the remaining lemon juice and cayenne pepper.
- Continue to broil for 10 minutes more, or until the chicken is fully cooked.
- Serve immediately with hot rice.
