Broiled Lemon Cajun Chicken

This dish really goes together fast. I recommend serving it with a bright green vegetable or broiled tomato halves on the side. I've made it tons of time on TV.

Ingredients

  • 8 chicken breast halves skinned and boned
  • 1 1/2 cups cups butter
  • 3 large cloves garlic minced
  • 2 tablespoons dried parsley
  • 3 tablespoons cayenne pepper
  • 1/3 cup fresh lemon juice

Instructions

  • Preheat the broiler.
  • Trim the fat and tendons from the chicken, rinse, and pat dry.
  • In a medium frying pan, melt 2 tablespoons of the butter over medium heat.
  • Add the garlic and sauté for 1 minute.
  • Add the remaining butter, parsley and 1 teaspoon of the cayenne pepper.
  • Simmer for 1 minute.
  • Spread 1⁄2 cup of the butter mixture in a 9×13-inch baking pan.
  • Arrange the chicken breasts in the baking pan.
  • Sprinkle evenly with 2 tablespoons of the lemon juice and 1 tablespoon of the cayenne pepper.
  • Cover the chicken with the remaining butter mixture.
  • Broil 6-inches from the flame for 10 minutes.
  • Turn chicken, and sprinkle with the remaining lemon juice and cayenne pepper.
  • Continue to broil for 10 minutes more, or until the chicken is fully cooked.
  • Serve immediately with hot rice.
