Golden Fried Shrimp

Simple and to the point fried shrimp. Golden they are. Or should be if the oil is the right temperature! It's the dipping sauces that always make these stand out.

Ingredients

  • 1 1/2 pounds large uncooked shrimp shelled and deveined
  • 1 egg yolk
  • 2 egg whites
  • 1 teaspoon salt
  • 1/4 cup all-purpose flour
  • 1/2 cup finely-crushed plain salt crackers
  • vegetable oil for deep frying

Instructions

  • “Butterfly” the shrimp and rinse under cold running water.
  • In a shallow bowl, combine the eggs and salt; beat well
  • In another bowl, combine the flour and cracker crumbs.
  • Dip each shrimp first in the egg mixture, then roll in the cracker mixture; pressing on lightly to coat completely.
  • Repeat procedure until all shrimp are coated.
  • In a large deep pot, heat 3-inches of the oil to 365°F.
  • Deep-fry the shrimp for 2–3 minutes, or until golden brown.
  • Drain well on paper towelling.
  • Serve immediately with fresh lemon wedges.
