Stir-Fried Fish

One of the healthiest ways to prepare food is to stir-fry. This dish is wonderful with its dark and glossy gravy.

Ingredients

  • 1 pound snapper drum, or other firm lean fish fillets, skinless
  • 3 tablespoons cornstarch
  • 4 tablespoons vegetable oil
  • 3 tablespoons soy sauce
  • 2 teaspoons white wine
  • 1 tablespoon brown sugar
  • 2 small green onions chopped
  • 1 cup broccoli flowerets
  • 2 carrots sliced thin
  • 2 celery stalks sliced thin
  • 2 tablespoons minced fresh parsley
  • 2 cups cooked white rice

Instructions

  • Cut the fish into 1-inch cubes, and coat with 2 tablespoons of the cornstarch.
  • In a wok or large frying pan, heat 3 tablespoons of the oil over medium-high heat.
  • Add the fish pieces and sauté until nearly done (about 2 minutes).
  • Remove fish from the hot oil and drain on paper towelling, set aside.
  • In a small bowl, combine the remaining cornstarch with the soy sauce, white wine and brown sugar, set aside.
  • Add the remaining oil to the wok or frying pan and heat over medium-high heat.
  • Stir-fry the onion, broccoli, carrots and celery until tender-crisp.
  • Return the fish and add parsley to wok.
  • Pour the sauce over the fish and vegetables.
  • Cook until the sauce thickens and the fish is full cooked.
  • Serve immediately over the hot rice.
