Stir-Fried Fish
One of the healthiest ways to prepare food is to stir-fry. This dish is wonderful with its dark and glossy gravy.

Ingredients
- 1 pound snapper drum, or other firm lean fish fillets, skinless
- 3 tablespoons cornstarch
- 4 tablespoons vegetable oil
- 3 tablespoons soy sauce
- 2 teaspoons white wine
- 1 tablespoon brown sugar
- 2 small green onions chopped
- 1 cup broccoli flowerets
- 2 carrots sliced thin
- 2 celery stalks sliced thin
- 2 tablespoons minced fresh parsley
- 2 cups cooked white rice
Instructions
- Cut the fish into 1-inch cubes, and coat with 2 tablespoons of the cornstarch.
- In a wok or large frying pan, heat 3 tablespoons of the oil over medium-high heat.
- Add the fish pieces and sauté until nearly done (about 2 minutes).
- Remove fish from the hot oil and drain on paper towelling, set aside.
- In a small bowl, combine the remaining cornstarch with the soy sauce, white wine and brown sugar, set aside.
- Add the remaining oil to the wok or frying pan and heat over medium-high heat.
- Stir-fry the onion, broccoli, carrots and celery until tender-crisp.
- Return the fish and add parsley to wok.
- Pour the sauce over the fish and vegetables.
- Cook until the sauce thickens and the fish is full cooked.
- Serve immediately over the hot rice.
