Rolled Chicken Breasts (Company Chicken)

It sure is EASY!!! And makes a pretty good impression!

Ingredients

  • 8 chicken breast halves skinned and boned
  • 8 slices of bacon
  • 2 8 ounce packages dried beef
  • 2 10 ounce cans cream of mushroom soup
  • 1 1/2 cups sour cream
  • 1 8 ounce can sliced mushrooms with liquid
  • 1/4 cup water
  • salt and fresh-ground black pepper to taste

Instructions

  • Preheat oven to 375°F.
  • Trim the fat and tendons from the chicken; rinse and pat dry.
  • Fold each chicken breast in half, wrap with a slice of the bacon, and secure with a toothpick.
  • Rinse and drain the dried beef.
  • Line the bottom of a 9×13-inch baking pan with the beef slices.
  • Arrange the rolled chicken breasts on top of the beef.
  • In a large bowl, combine the soup, sour cream, mushrooms and water.
  • Mix well.

Notes

This dish looks a lot fancier and more time consuming than it really is. But no one has to know this…Let it be your secret! Also, go easy on the salt, the dried beef has plenty! and it may be wise to soak them a bit, and then rinse them and pat dry.
