Hook & Ladder Linguini

This pasta dish is perfect after a particularly hard day. It has ingredients from all four food groups and is wonderful with chewy Italian bread.

Ingredients

  • 8 ounces linguini uncooked
  • 1 tablespoon butter or margarine
  • 1 cup sliced mushrooms
  • 1/2 cup sliced celery
  • 2 tablespoons cornstarch
  • 1 cup chicken broth
  • 1/3 cup dry white wine
  • 2 teaspoons lemon juice
  • 1/4 teaspoon thyme
  • few dashes hot red pepper sauce
  • 1/2 cup grated Mozzarella cheese
  • 1 1/2 cups cooked chicken cut into strips
  • 4 ounces fresh spinach chopped
  • fresh-grated Parmesan cheese

Instructions

  • Cook the linguini according to package instructions (omitting the salt).
  • Drain and keep warm.
  • In a large frying pan, melt the butter over medium heat.
  • Add the mushrooms and celery, sauté until tender.
  • Stir in the cornstarch and mix well.
  • Stir in the chicken broth, white wine, lemon juice, thyme and red pepper sauce.
  • Cook, stirring constantly, until bubbly.
  • Reduce heat and add the Mozzarella, stirring constantly just until the cheese melts.
  • Stir in the chicken and spinach.
  • Simmer, covered, for 1 minute or until mixture is hot.
  • Serve immediately over the hot cooked linguini.
  • Sprinkle with the Parmesan cheese.
