Cheddary Meatloaf
This is a classic meatloaf recipe with a twist. The salsa and cheese are delicious! Try adding your own favorite ingredients to the old standard — you may come up with something new!

Ingredients
- 2 pounds lean ground beef
- 1 large white onion diced
- 2 eggs slightly beaten
- 3/4 cup salsa
- 2 cups grated sharp Cheddar cheese
- 4 tablespoons prepared mustard
- 1/4 cup dill relish
- 1/2 cup dry Italian bread crumbs
- 6 bacon strips uncooked
Instructions
- Preheat oven to 375°F.
- In a large bowl, combine all of the ingredients (except the bacon strips).
- Mix well. You’ll find using your hands is the easiest.
- Form the meat mixture into a large oblong loaf.
- Place in an ungreased 9×13-inch baking pan.
- Place the strips of bacon across the top of the loaf diagonally.
- Cover with aluminum foil.
- Bake at 375°F for 45 minutes.
- Uncover and continue baking another 15 minutes, or until fully cooked.
- Let loaf stand for 10 minutes before slicing and serving.
