Cheddary Meatloaf

This is a classic meatloaf recipe with a twist. The salsa and cheese are delicious! Try adding your own favorite ingredients to the old standard — you may come up with something new!

Ingredients

  • 2 pounds lean ground beef
  • 1 large white onion diced
  • 2 eggs slightly beaten
  • 3/4 cup salsa
  • 2 cups grated sharp Cheddar cheese
  • 4 tablespoons prepared mustard
  • 1/4 cup dill relish
  • 1/2 cup dry Italian bread crumbs
  • 6 bacon strips uncooked

Instructions

  • Preheat oven to 375°F.
  • In a large bowl, combine all of the ingredients (except the bacon strips).
  • Mix well. You’ll find using your hands is the easiest.
  • Form the meat mixture into a large oblong loaf.
  • Place in an ungreased 9×13-inch baking pan.
  • Place the strips of bacon across the top of the loaf diagonally.
  • Cover with aluminum foil.
  • Bake at 375°F for 45 minutes.
  • Uncover and continue baking another 15 minutes, or until fully cooked.
  • Let loaf stand for 10 minutes before slicing and serving.
